It's Thanksgiving and I am Grateful!

The menu was a “traditional” one with Roasted Turkey, Gravy, Smashed Potatoes, Corn and Parker House Rolls.  We had some salads (green and composed) and there was fruit throughout the day as well. 

I wanted to finish by saying that I am a big fan of using Thanksgiving as a time to reflect on all the things I have to be thankful for.  But what I want to mention here is how thankful I am to have such a dedicated and hard working staff.  Besides possessing excellent skills in the kitchen, they also care so deeply about preparing healthy and delicious food for the FLACS 1 students every day.  That is not hyperbole, I mean every word of it.  It is so hard to find people that care about their craft and the work they do.  It cannot be taught, some people just have it and I can say with complete certainty that Maria Castellanos, Diego Lopez, Segundina “Nina” Solano, Vincente Velazquez and Richard Cruz have it in spades.
