It was so nice when she asked me last week and I was able to tell her we're serving it next week. Her eyes lit up and is just another reminder of why I love what I do. The other person is Michiko Tomioka, our former intern who refined all of our Japanese recipes and gave us a few new ones as well.
So whats for lunch??? It's a Japanese themed menu with Salmon Teriyaki as the entree. We make our teriyaki with soy sauce, mirin, grated ginger and honey. It's simmered until slightly thickened and then painted on the fish as it cooks under the broiler. Salmon is the perfect fish for strong flavored sauce because it has enough flavor and fat to cut through the sweetness without being overwhelmed.
On the side we will have a version of Hiyashi Chuka which is a cold ramen noodle dish served with a sauce instead of in broth. The sauce will contain soy sauce, rice wine vinegar, ginger and some chili flakes. The vegetable will be Steamed Snow Peas. The little guys are packed with fiber and vitamins A, C and K. They are also a lot of fun to eat, especially with CHOPSTICKS!! Yes that's right...the real star of todays menu will be the chopsticks. Everything on the menu was chosen so that it can be easily eaten using them....well, I say "easily" but it's always fun to walk around and see all the different strategies kids use to eat with them.
